Fast and easy chicken salad in avocado cups

One of the big questions I get asked is what can I eat that is healthy?  I talk to a lot of patients about reducing or eliminating gluten, sugar, soy and dairy.  For someone who is doing this for the first time it is hard to even comprehend what you can eat.  So, I am going to be posting some great foods that will keep you full and happy while you are changing your diet.

Chicken salad in avocado cups is one of my favorites!  It is easy to make ahead of time, you can use up leftovers, and it is really satisfying.  Putting into an avocado just makes it that much better.

I use an olive oil mayo for this because I do NOT want to use a mayo with soy, corn or vegetable oil.  The avocado is a healthy fat, and I used organic chicken and celery.  Those things combined make this a pretty healthy meal, and a summer favorite.

I usually make this after I have had chicken for dinner and have some leftovers. This will feed 1 person if you are really hungry, or 2 people for a light lunch. This almost sounds too easy to be true, but it makes a great lunch!

Instructions
  1. Mix your chicken, celery, bacon, mayonnaise in a bowl and add salt and pepper to taste.
  2. When you are ready to eat, cut the avocado in half lengthwise and take out the pit. Slice the meat of the avocado in a grid pattern so it is easier to scoop out, then fill the hole with the chicken salad and you are ready to eat!
