The soup that helps you kick the cold

This recipe is to help fight off a cold or the flu. You will want to make this when you feel like you are coming down with something. It has a very heavy ginger influence, so it is hot and will help you body to sweat it out.
Ginger is an anti-microbial food that is good for digestion and used for nausea.

2 Tbls Oil
3 cubed chicken breasts (raw)
4-5 inches of ginger root sliced thin
½ – 1 bundle of scallions to taste
2 cloves garlic
1 package sliced mushrooms (remove from recipe if you have a lot of mucus)
2 Tbls soy sauce
2 Tbls cider vinegar
Water as needed ~2 cups

Place oil in skillet and sauté chicken cubes until nearly cooked through. Add ginger root slices, scallions, mushroom, soy sauce, cider vinegar and water. Let simmer for 40 minutes up to 1 ½ hours. Optionally, you can put all ingredients into a crock pot on low for 6 hours. The more the stew cooks, the more the flavors meld.

Serve as a soup or over rice, or for a grain free option over grated cauliflower. (Grate cauliflower with cheese grater and put into oven until warm. This works great as a rice substitute.)

You can also get creative with this recipe by adding more ingredients.  A handful of kale, some glass noodles or spinach would be great in this!
